What stress, but what fun!

Each tier consisted of 3 layers of chocolate sponge cake filled with a creamy choc mousse.
My original recipe was just way too soft for any design.

The recipe was moist and devine, but once I've stacked one tier, I could see the cake sagging.
Out of all the chocolate flavoured cakes I've made, 3 of these orders were complete boo boos.

figurines were falling through the cakes. Small baby shower cakes where falling apart and a 3 tiered wedding cake started cracking with the slightest movement of the vehicle.

The customers were dissappointed but raved about how devine the cakes were, which was fine, but to receive a cake that has been damaged in transit - just aint right.

So I created my own. I took a chance by using my new recipe for an order, without testing it first - TOES AND FINGERS CROSSED ALL DAY!

It came out wonderfully. The cake was still moist and soft, but firm enough to be stacked and it was in one piece when it arrived at its destination.........

Finishing touch with a Rose

Roses or actually, fresh flowers are the perfect finishing touch.

I'm a rose kinda gal and i must say these flowers are looking ppprrettty darn great on this cake.

The reception decor was cream and gold, so the cake with a few red roses in between, looked extremely good.

This cake screams of, COLOUR!.....HOLIDAY!......BREEZY!......BEACH!.....FUN!......and oh so sweet......

Not too bad hey, but I think little Miss Hawaii needs to shed a few pounds before jumping into a bikini for her next show-off, or so my brother says..........I think she's perrrrfect......

3 Tier White Chocolate Wedding Cake

It's been hot........EXTREMELY HOT in Cape Town, these past couple of weeks. Ice cubes are being popped like sweets, chocolate bars and sugary treats are placed in the fridge to prevent an ant attack and of course the melting of all chocie bars. So you can just imagine what a challenge it was to create this cake.

It's a chocolate cake with a rich chocolate mousse filling. I'm a 'fullcream' girl so all my desserts and mousses are made with real fullcream not the type that tastes of plastic and air.

Each tier is covered with a fluffy buttercream frosting. Once again, no artificial ingredients just good full cream milk and butter added to the sugary white powder.

Around each tier are thin white chocolate moulded sticks. Not cooking chocolate, but fullcream white milk chocolate and we all know how quickly milky white chocolate can melt when exposed to high temperatures.

I had 2 fans blowing away, popping the sticks into the fridge as often as I could, and both my front and back doors open, hoping for some sort of breeze.

5KG of WHITE MILK CHOCOLATE!!

What a mission.............what a challenge..............what a joy!!

At the end the cake looked FAB. Shot through to the reception venue and added the final decorations, roses, and berries.

I was exhuasted, but looking at my creation got me all excited. I was happy and the bride was thrilled........................

This little creation was made for a Wonderful Teacher, Mrs. Parker Adams. A Grade 2 educator at Islamia College.

The grade 2B learners planned to throw a birthday surprise for their teacher. the planners were all girls of course. Ameerah my 7yr old politely asked........'mommy can you make just one cupcake for my teacher. I know you busy, but just one cupcake for the candle mommy?'......while I was huffing and puffing away to complete yet another order.

12:15 pm and finally, the order was complete. Now to whip up the one cupcake. NO WAY!

It was 12:30 in the evening, I was tired, the kitchen looked like a ship wreck and I have to face my 8-5 day job in the morning.

There was just no way...................... that I could do just one cupcake for my daughters teacher, when I spend endless sleepless nights creating 4 layer, 3 tier cakes for others.

Not only was the request so sweet and the planning of these little ladies, was just too precious. I decided to create this cake, for an absolutely wonderful , sparkling person, who is loved by all the students in her class.

....'She's here!...The cake is here!'....yelled little voices as I carried my creation to the party destination. It was as if she was a figure of high status, with all eyes on her from the parking lot, to the balcony.

Gosh, even I felt like royalty.

She might not have been the well-known Barbie doll,some of us had back in our youth, but she was just as petite and graceful.

Little Miss Perfect

I went through so many 'do it yourself' websites and video clips on how to create a sugarpast fairy but nothing caught my attention. So I decided to create one all on my own, without any examples or samples from the net.

After much rolling and shaping I finally managed to create a figurine that resembles a perfect, well-mannered fairy.

I am so proud of her.............in my eyes, she's PERFECT!!

Unfortunately I was not home when the client's driver came to collect the order (busy slaving away at my day job), but soon received a call and I could sense the delight in her voice..........she was making her way home,and had not seen the cupcakes yet.She received a call from her mom to confirm that the cakes have arrived and they look stunning!!

Obviously I couldn't stop smiling...............

My favourite part of it all................making my customers happy :)

Don't cut that Cake!!

Someone had a lot of faith in me and tasked me with creating a wedding cake.

But not just any wedding cake....................it had to be a show piece, that would be positioned in the cente of the reception venue.

Obviously my nerves were shot to the roof but remained calm and positive and reassured myself that I could do it.

After many e-mails, discussions and sketches, I came up with this. A 3 tier Chocolate mousse cake, covered with white sugarpaste, bordered with white satin ribbon, decorated with hand-made sugarpaste roses and circular diamante shapes and to top it all off an exquisite diamante broach in the centre of the satin bow.

The wedding was in Stellenbosch, it was hot, it's a mousse cake, it's white.................AAAAAHHHH!!!!!

But thank goodness we arrived in one piece, I had ample time to tier my cake and do last minute touch-ups.

And Vuala!!....................I was completely chuffed and for the client, well it was love at first sight.

But I cannot take all the credit. I could never have pulled this off without the love, support and assistance of my wonderful husband. He was right by my side, passing on the roses and making sure that the cake was positioned perfectly, before we made our way home................

One piece of advise though.............Chocolate mousse and white sugarpaste are not the best of frie

nds. I cried tears of irritation, as I tried my best to keep the mousse from smudging onto the sugarpaste.

Another lesson learnt :)

Back Again

Hi there!!

I've finally managed to set time aside to update my blog. It's been a wild ride but enjoyed every thrill.

Being a wife and mother to now 3 daughters......YES 3..........I had my third princess in April of 2009...not forgetting that I'm an Accounts Clerk during the day....it's not always easy to enjoy my hobby. Having to juggle all these balls and still try to keep one hand free.............It's hectic work, but I managed to practise my passion, with the limited time available in my day.

someone once asked me..........'WHERE DO I FIND THE TIME???.........well, that's easy, when homework is done, tummies are full, faces are cleaned, tucked in bed and Hubby's sipping his cup of coffee, I get to sit back and have some me time with a piece of dough and various colours to shade it with. My head would hit the pillow at.....mmmmmmmm....about 1:00am in the morning........

So where are the pics to prove it??........Well someone suggested that I utilize Facebook as an advertising tool. It's working, but all they do is comment. Comments are good but place some orders already!!
I've discovered that majority of my customers actually came to know about RazMaTaz, thru my BLOG!

So, when homework is done,
tummies are full,
faces are cleaned,
tucked in bed
Hubby's sipping his cup of coffee,
My sugarpaste is moulded
Order is complete......................EXHALE!!................I can update my blog...........

I made these cupcakes (on the eve of the party...HECTIC!!) for a 9 year old. Though he's a huge Ben 10 fanatic, like all other kiddies his age, he certainly enjoyed his pirates, even the little ladies that was present.

The sad part though was watching the little munchkins bite away this creations in 30 seconds FLAT!!

At some point in our tiny tot years, we squeezed our ducky all the way to the tub for bath time. With towels on the floor to seep up our spills and while mom's not looking, use our quacky to squirt away the bubbles. Since my grounded teenage years, I occupied myself with adorning my bedroom wall with, a freehand illustration of this lasagne freak.

Jotting him down on a piece of rolled out sugarpaste was just as much fun.

This cutie was oodles of fun to create. Not only am I completely 'gaga' over the colour pink, but it took me to my innocent years when programs such as the Care Bears, Gummie Bears and My Little pony, had my cheeks glued to the screen.

Check out my ponies! Instead of spending hours colouring and moulding my sugarpaste, all I needed was a piece of styrofoam, cute and colourful pics and a hot wire and VUALA!.....snazzy cut-outs to decorate my cake with.

At first I was clueless as to what or who Ben 10 was, until I accompanied my daughter to a party and ........yip, BEN 10!!

sing along people! You guessed it, ironically this was a themed cake for Jimmy Jungle. The little chap was nuts about reptiles, insects etc. Things to make the gals screech, and did I have dejavu of being 4 again.

Took me back when my cousins used to chase me round my aunts house with chameleons & geckos. Getting cold shivers just reminiscing...
