3 Tier White Chocolate Wedding Cake


It's been hot........EXTREMELY HOT in Cape Town, these past couple of weeks. Ice cubes are being popped like sweets, chocolate bars and sugary treats are placed in the fridge to prevent an ant attack and of course the melting of all chocie bars. So you can just imagine what a challenge it was to create this cake.

It's a chocolate cake with a rich chocolate mousse filling. I'm a 'fullcream' girl so all my desserts and mousses are made with real fullcream not the type that tastes of plastic and air.

Each tier is covered with a fluffy buttercream frosting. Once again, no artificial ingredients just good full cream milk and butter added to the sugary white powder.
Around each tier are thin white chocolate moulded sticks. Not cooking chocolate, but fullcream white milk chocolate and we all know how quickly milky white chocolate can melt when exposed to high temperatures.
I had 2 fans blowing away, popping the sticks into the fridge as often as I could, and both my front and back doors open, hoping for some sort of breeze.

What a mission.............what a challenge..............what a joy!!

At the end the cake looked FAB. Shot through to the reception venue and added the final decorations, roses, and berries.
I was exhuasted, but looking at my creation got me all excited. I was happy and the bride was thrilled........................

wow - did you make your own chocolate curls as well?

Hi Nasheta

These are actually thin longish moulded sticks around the cake.

The extremely hot weather made it difficult to make any curls.
